Cedar Plank Baked Salmon

Ingredients:

    •    1 salmon fillet (with skin), 2.5–3 lbs, about 3/4 inch thick, pin bones removed

    •    1/4 cup white wine

    •    2 tbsp olive oil

    •    Zest and juice of 1 lemon (finely grated)

    •    1/3 cup fresh dill, finely chopped

    •    1 tbsp kosher salt

    •    1.5 tsp freshly ground black pepper

    •    1 tbsp minced garlic

    •    1 untreated cedar plank (16 x 8 inches, 3/4 inch thick)

Instructions:

    1.    Soak the cedar plank in water for 1 hour. When the hour is almost up, preheat the oven to 350°F.

    2.    Rub the salmon with olive oil, salt, pepper, and minced garlic. Combine white wine, lemon zest, lemon juice, and dill, then pour this mixture over the salmon.

    3.    Remove the cedar plank from the water and shake off excess moisture.

    4.    Place a flat rack on a baking sheet (line with foil for easy cleanup, if desired). Place the soaked plank on the rack and heat it in the oven for 5 minutes.

    5.    Remove the heated plank and place the seasoned salmon on it. If the salmon has a thinner end, fold it under for even cooking.

    6.    Return the baking sheet to the oven and bake for 20–25 minutes, or until the salmon flakes easily with a fork. Be careful not to overcook.

    7.    (Optional) Before serving, glaze the salmon with melted butter and sprinkle with extra fresh dill.

Sautéed Cabbage

Ingredients:

    •    1 small head white cabbage (including outer green leaves, about 2.5 lbs), chopped

    •    2 tbsp unsalted butter

    •    1/2 tbsp minced garlic, or more to taste.

    •    1.5 tsp kosher salt

    •    1/2 tsp freshly ground black pepper

Instructions:

    1.    Melt the butter in a large pan over medium heat.

    2.    Add the minced garlic and sauté for 1–2 minutes until fragrant.

    3.    Add the chopped cabbage to the pan and season with salt and pepper.

    4.    Sauté the cabbage, stirring occasionally, until it reaches your desired doneness. For a slightly crispy texture, cook for about 8–10 minutes. Adjust timing based on your preference.

    5.    Taste and adjust seasoning if needed before serving.
