Pumpkin Coconut Chicken Soup

Ingredients:

    •    5 cups water

    •    1 cup onion, chopped

    •    1 cup celery, chopped

    •    3 sprigs thyme

    •    2 teaspoons salt

    •    1 teaspoon black pepper

    •    2 teaspoons onion powder

    •    2 teaspoons garlic powder

    •    1 teaspoon oregano

    •    1 teaspoon turmeric

    •    1 teaspoon ginger

    •    1 tablespoon olive oil

    •    2–3 cups root vegetables of your choice, chopped

    •    1 (15 oz) can 100% pure pumpkin

    •    1 (12 oz) can coconut milk

    •    1 pound chicken (dark meat preferred), cut into pieces and lightly seasoned with salt and pepper

Instructions:

    1.    In a large pot, bring the water to a boil.

    2.    Add all ingredients, including the chicken and vegetables.

    3.    Return to a boil, then cover and reduce heat to low. Simmer for approximately 30 minutes.

    4.    For a creamier texture, blend the soup using an immersion blender or transfer it to a regular blender.

    5.    Serve warm and enjoy!
